starts 23rd Feb 2011 each Tues 9.00-3.00 pm@ Emerald or 9-4.30pm when at my "Telopea Mtn" classroom plus on 5 Sat or Sun------ final day July 19th.

How to Select, buy, plant, graft new ones and care for them. We will also discuss some of those varieties we had once and what is still available now with Apples, plums, Nashi, Pears & Cherries plus so much more.

This course is with the expert from Cheeselinks here at Telopea Mtn to teach you how to make Halloumi &  Mozzarella cheese to take home, we will also demonstrate how to make Boccincini and make Ricotta to eat on the day.

Class in Making Cider and fruit wines at home

This one day course will give you the basic skills to make an apple cider & scrumpy or Pear cider (Perry) and then we will taste an apple cider made in 5 days using smkt apple juice.

After a discussion on varieties of cider apples and other details on wine making 

we will then make a batch of fruit wine ( the variety will depend on whats in season)

Cheese making at home

In 2009 we started to run a simple cheesemaking course so that you could make a number of dairy products at home, these are all ready to eat from the very next day  and represent good value for money and a great return on your time.

Currently on our full day course we make Feta (a nice firm style) plus Marscapone to acompany cake, fruit or other more adult desserts.

We have set dates for the last 2 classes in 2010, Friday 12th Nov plus the Friday one for Xmas is on Dec 3rd 2010

On this day we will make Feta , Mascarpone, "Greek Style " Yogurt and Ricotta, you take home the first 3 with you & we all eat some  Ricotta on the day.

"Growing Organic Veg" this course is now Govt funded now just $119

Grow your own organic food at home.

Feed yourselves and sell the surplus at a farmers market or to a local box scheme.

2008 Research trip to Europe.

Even good permies need a holiday now and then, for Silvia and I this means a research trip to somewhere, this time it was to Spain, Ireland & Southern England.
